What do you do when there are only two of you and you have a ripe, juicy, giant watermelon? Make something watermelon, like this refreshing Watermelon Cooler.
Three easy ingredients and a blender is all you need to whip this up. Of course if you added a fourth ingredient (ie., rum or tequila), that's entirely up to you!
We had this cold right out of the blender and also tried it over crushed ice. Either way, it's so light and fresh, and a perfect recipe for sweet summer watermelon. You can easily double or triple it if you need to.
Fresh Watermelon Cooler
Refreshing and lightly sweet. Perfect drink for a warm summer evening.
Ingredients
- 3 C cold, ripe, sweet watermelon (cubed and deseeded)
- 1 (12 oz) can 7-Up
- 1/16th teaspoon almond flavoring
Instructions
- Put the cubed watermelon, 7-Up and almond flavoring into a blender and puree until smooth (about 10 seconds). Divide into martini or other small glasses, with or without crushed ice.
Notes
Tips and Stuff:
I didn't strain the pureed watermelon, as I like the pulpy texture. If you want it smoother, strain through a sieve, pressing through with a large spoon.
Taste a spoonful before taking it out of the blender. If your watermelon isn't very sweet you and want it sweeter, you can add a little sugar or other sweetener.
Careful with the almond flavoring - you don't want it to overshadow the watermelon flavor.
