During the Summer we keep a big pitcher of iced tea in the refrigerator. I dress mine up with fresh mint and a little squeeze of fresh lemon juice and usually dump sugar or artificial sweetener in it until it's just sweet enough.
Of course you have to have it full of ice, too, to keep it cold while you sip on it for awhile.
Then I thought, hey, I could make sweet tea popsicles and they would be so refreshing. And they are!
I experimented a bit with the tea mixture and found that a strong, sweet tea with a twist of a few mint leaves made the best pops.
They're icy and cold and just the perfect thing when it's 100 degrees out.
I added a tablespoon or so of evaporated milk to see if they would come out better, but it just wasn't quite right, although that tea-sugar-milk mixture was excellent cooled and over ice (I waste nothing).
You can control how strong you want the tea, but I recommend fairly strong because the flavor is somewhat diluted after frozen. Same with the sugar - it seems like a lot of sugar, but it turns out perfectly sweet.
I like these pops because I know exactly what's in them. Enjoy and stay cool!
Southern Sweet Tea Popsicles with Mint
I love this icy treat! They're refreshing and way cheaper than store pops.
- 2 tea bags
- 3 C water
- ¼ C sugar
- fresh mint leaves (3-4 medium)
- Put 3 cups of water into a medium sauce pan and bring to a boil. Turn off the heat and add the tea bags.
- Add the sugar and gently stir until it dissolves. Gently twist the fresh mint and throw them into the tea.
- Wait about 15 minutes and take the tea bags and mint leaves out of the tea. Pour into popsicle molds and freeze for at least three hours, until frozen. Before serving, run the molds under cool tap water to loosen and remove.
Tips and Stuff:
I wouldn't add lemon juice because it becomes a little bitter when frozen with the tea.
Sugar or Truvia are the best choices for sweetener in this, although honey might add a nice flavor.
