The cherry crop is in! Every year Central Market has a wonderful selection of fresh, sweet, deep red cherries and this year was no exception. Summer fruits are just the best and I hope to take advantage of the peaches, strawberries and blueberries, too!
Bret doesn't prefer (code for "doesn't like") cherries, so it's a challenge to come up with recipes to use up the couple of pounds of cherries every year.
I did try to freeze them with no luck - they just didn't taste very good after they were in the freezer for a month.
Generally to freeze fruits you peel or pit them, lay them in a single layer on a pan and put them in the freezer for an hour or two. Then tightly seal them in a freezer bag and label. Peaches did OK for me, but not so much the cherries.
Back to this recipe, though. I took the fruits I like and have on hand to create this wonderful fruit smoothie. If you don't normally buy cherries, I urge you to buy some this year and see what you can create!
I found I had to add a teaspoon or so of honey to sweeten to my tastes, but you can experiment and see what you think.
This Peachy Cherry Almond Smoothie is a great and tasty way to get all of your fruits in for the day!
Peachy Cherry Almond Smoothie
Refreshing, healthy breakfast or snack smoothie. Get those fruits in!
Ingredients
- 1 ½ C. crushed ice
- 1 medium to large ripened peach, peeled and pitted
- 1 heaping cup of fresh cherries, pitted
- ¼ C. skim milk
- 2 tbsp. orange juice
- 1 tsp. honey
- 2 drops of almond flavoring
Instructions
- In a blender, layer the ingredients in the order listed, making sure the ice is on the bottom.
- Puree until smooth.
- Makes about 2 medium servings.
Notes
Tips and Stuff:
If your refrigerator doesn't make crushed ice, put a couple cups of regular ice cubes into the blender before the other ingredients and blend until crushed. Then add the other ingredients and puree till smooth.
If you don't have honey, a packet of Truvia or tsp. of regular sugar will do. I did find it needed the sweetener.
