It's time to start picking the stuff to put on Christmas platters for the neighbors and friends and these White Chocolate Peanut Butter Krispies looked soooo good that I had to test it for quality control (we love that quality control.....).
Well, it passed with flying colors and the more we test-taste them, the more we like them. Of course there's the sweet/salty thing with that white chocolate/dry roasted salted peanuts combination. Then there's the crispy/gooey combo with the marshmallows/rice krispies thing going.
All that along with a light peanut butter flavor in with the white chocolate coating make this candy just divine!
I think my favorite thing, though, is the marshmallow popping up when you least expected it. The marshmallow melts just a bit when the warm mixture is poured onto dry ingredients, but mostly kept its consistency for that gooey pull.
I'm not sure if White Chocolate Peanut Butter Krispies will go on the Christmas plates, as I don't know how "Christmasy" they are, but they'll definitely stay in the candy rotation!
White Chocolate Peanut Butter Krispies
Outstanding combination of sweet, salty, crunchy, gooey.
Ingredients
- 2 C Rice Krispies cereal
- 2 C dry roasted peanuts
- 2 C marshmallows
- ½ C peanut butter
- 1 and ½ packages, (12 oz pkgs) white chocolate chips
Instructions
- Combine cereal, peanuts and marshmallows in a large bowl. Set aside. In a pan, melt white chocolate chips and peanut butter over low heat, stirring constantly until smooth.
- Stir in the white chocolate and peanut butter mix to the cereal mixture and mix well.
- Drop by tablespoons onto waxed paper and let set. Refrigerate for 1 hour. Store in airtight container.
Notes
Tips and Stuff:
Only change I would make is to add ¼ C more Rice Krispies for a little more krispy crunch.
Be sure and let them refrigerate after the first set. After that, I sealed in an airtight container and stored them on the counter and they kept the firmness very well (as long as they lasted!)
